This class is a hands-on introduction to dairy fermentation. Students will learn the basics of how to transform milk into a variety of delicious and probiotic-rich products. You’ll Learn to Make: Dairy Kefir, Yogurt, Fresh Farm Cheese, Feta, Ricotta!

Whether you want to learn about goats, or increase your animal skills by working with another species, this camp is hands on education. Your skill increases when you learn how to apply it to varied species in their own habitat. From birth through daily care, cleaning yards, milking, and troubleshooting - you will be outside working and learning.
January - December - 1 class is 4 weeks

Fruit Vinegars and Fruit Ferments PART II - we will be building off of Chef Scotts first class where we learned about fruit and wild harvested berry vinegar making and kombucha vinegars. We will be focusing on using these long fermenting vinegars while preparing meat dishes!

This class will be in our Border Farm Kitchen and go through all of the steps and stages of traditional sourdough bread making. From the feeding the starter, dough, proofing, scoring, and baking. Troubleshooting and considerations, as well as taste testing!

We have a drying room filled with our herbs/flowers that we collected during 2024/25. In this class we will be covering our favorite herbs to grow for culinary and medicinal purposes, and also the herbs we treasure that are wild harvested.

We will connect with you to design a tour that meets your focus or desired interest with what we are doing. Whether you are interested in biodynamic gardening, compost making, animals, structures, natural rearing care, farm layout, or a blend. Tours last about 1.5 hours.
